An Evening with the Chef and the Sommelier
Chef Pajo Bruich and Sommelier Anani Lawson are in Sacramento once again for an experiential and delicious evening. Part II of Epicure & Discoveries in Wine is Saturday, July 24th at 6:00 p.m.
As Pajo says, it will be an evening of emotions and tastes, both familiar and uncommon. Your cultural expectations of food and wine will be challenged, as the two brilliantly display phenomenal ingredients paired with an innovative gastronomic approach.
Pajo keeps some of the menu discreet until your arrival in an attempt to elevate the overall experience. The format is a 5 course-tasting menu. What I can tell you is Chef Mark Liberman of Black Sheep Butchery is joining Pajo in the kitchen for a surprise dish. Here is a sneak peak of a few dishes:
Salad of Summer Fruit- Heirloom Tomato Sorbet, Compressed Watermelon, Shaved Black Plum, Ricotta “Sphere”, Green Zebra Gazpacho, Opal Basil, and Lucero Olive Oil Powder
Aguachile- Jumbo White Prawn, Avocado, Mango, Sweet Peppers, Cilantro Pesto, Pickled Cucumber, Lime Vinaigrette, and Chive Blossom
Ginger Glazed Kurobuta Confit- Sweet Corn Custard, Royal Blenheim Apricot, and Thyme “Essence”
On the wine front, Sommelier Anani has secured wine from several great Napa wineries Local vintner Stuart Spoto, of Spoto wines will be present to share a very special wine.

Anani Lawson, Sommelier at the world renowned ”The French Laundry” Restaurant is co-hosting the night, pairing some very specific wines with carefully crafted cuisine. The approach will be one to challenge your expectations and experiences of certain wines, and educate you how to approach and choose perfect food and wine pairings.
Pajo Bruich, Chef and Owner of “Pajo’s Boutique Catering“, is formulating an animated dining experience, bringing flavor combinations, textural variations and whimsical dishes together for a memorable experience. The menu will challenge you to think about food in a new way, using your senses as tools to your emotional judgment. Guests will be submerged in classic methods of cooking forged with very modern techniques to create an experience like no other.
